Green Eggs and Let's Get Hammered

Join us with authors Debbie Hampton and Connie Manion cooking from their book "Green Eggs & Let's Get Hammered". Preparing the green eggs and ham quiche recipe from this innovative cookbook.
The wonderful recipe for this dish that any egg and veggie lover should try. This recipe is a must try and this cookbook is full of other great recipes!
Ingredients:
-2 C chopped fresh spinach
-1 sweet onion
-4 eggs
-2 C milk
-1 C baking mix (Bisquick)
-1 C chopped ham
-2 C shredded cheddar cheese
-1 tomato, thickly sliced (optional)

Instructions:
-Preheat oven to 325 degrees
-Coat bottom of a 9" by 13" pan with cooking spray
-Combine spinach and onion in bowl of food processor. Process to finely chop
-Add eggs, milk and making mix and process
-Pour mixture into prepared pan
-Sprinkle ham and cheese over top
-Bake for 45-50 minutes until inserted knife comes out clean
-Garnish with tomato slices to serve
