For the shortbread crust:
Using a pastry blender or two forks mix together:
- 1 cup flour
- 1/4 cup brown sugar
- 6 Tablespoons butter
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- zest of half a lemon
Line an 8x8 pan with parchment paper. Press the crust in the pan and bake at 325 degrees for 10 minutes.
Prepare the filling by whisking together:
- 2 eggs
- 3/4 cup sugar
- 1/3 cup fresh squeezed lemon juice
- 1/4 cup flour
- zest of one lemon
Pour the filling onto the hot crust. Bake 20 minutes or till set.
