Making Meatloaf with Green Eggs and Let's Get Hammered

Join us in KKCO 11 News kitchen with the authors of "Green Eggs and Let's Get Hammered" making a mustard meatloaf. In the cookbook you will find this recipe under Ruth's Favorite Meatloaf and it was delicious and different from your typical meatloaf. The mustard and carrots add a nice twist to this yummy treat.
Ingredients:
- 2 lbs ground beef
- 3/4 C milk
- 1 1/2 C soft bread crumbs
- 2 t salt
- 1/8 t pepper
- 1 medium carrot, grated
- 1/2 C onion, diced
- 2 eggs, slightly beaten
- 1/2 C ketchup
- 6 T brown sugar
- 4 T prepared mustard

Instructions:
- Pour milk over bread crumbs.
- Add ground beef, salt, pepper, carrot, onion, and eggs. Mix well.
- Pack in 9" X 13" pan.
- Prepare topping by mixing ketchup, brown sugar, and mustard. Spread over unbaked meatloaf.
- Bake in a slow oven at 300 degrees for 1 1/2 to 2 hours.
