2 pounds chicken pieces - thighs or breast pieces
1 tsp salt
1/2 tsp black pepper
olive oil for the pan
2 cans diced tomatoes
3 cloves garlic, minced
1 1/2 tsps basil
1 TBSP oregano
1/4 cup kalamata olives, pitted and chopped
1 onion, thinly sliced
1/2 cup feta cheese, crumbled
Directions1. Preheat oven to 350F. Season chicken with salt and pepper.
2. Over medium heat in a large skillet with oven proof handles, heat oil. Brown chicken skin side down first, about 7-8 minutes per side. Remove chicken from pan and drain oil.
3. Add tomatoes, olives, onions, garlic, basil and oregano, stirring to combine. Return chicken to pan.
4. Place pan in oven, uncovered, and bake for about 45 minutes or until chicken is cooked through. Sprinkle with feta cheese.
