Jicama Slaw



Lemon juice ¼ cup
Yogurt- Plain 1 cup
Apple cider vinegar ¼ cup
Sugar ¼ cup
Cilantro- chopped 2 TBSP
Cumin ¼ TBSP
Kosher Salt 1 tsp (or to taste
Black pepper 1 tsp (or to taste)
Jicama Julliened 1 to 1 ½ lbs
Green onions -thin slice 2 oz
Red pepper- thin sliced 3 oz


1. Mix Lemon juice through Black pepper together well.
2. Mix Jicama, Onions and Red pepper together.
3. Mix marinade together with vegetables and toss until completely coated.
You can find jicama in the produce department at Food City. It is a round, kind of flat, vegetable with a brown peel. Ask one of the produce folks, they can get it for you.
