According to the Centers for Disease Control, one in three children born in the U.S. will develop diabetes, and 30 percent of them are overweight. The cost to treat diabetes is $174 billion annually.
Chef Ann Cooper says it's easy to make small changes in the cafeteria that will help solve some of these health issues.
Cooper says, "It's not easy to change, but it's really changeable. You can change those chicken nuggets to roast chicken, the tater tots to roast potatoes, you can add salad bars."
She's taken her ideas to Boulder, New York, and Atlanta. She also launched a free website with 80 recipes to help spread her healthy lunch revolution.
