GRAND JUNCTION, Colo (KKCO) -- More than one ton of turkey will be sliced and diced at Colorado Mesa University this week.

Sodexo (the school's food service provider), Colorado Mesa University and the Salvation Army are partnering up to feed more than 3,000 people who otherwise wouldn't have a Thanksgiving day meal.

Officials say more than 130 turkeys have been donated so far. Chefs were busy Monday morning preparing more than 90 gallons of gravy and more than 400 pounds of stuffing.

"It's just a great way to give back to the community. A lot of us are very fortunate to live here in the Grand Valley, and it's just a great way to give back," said Matthew Dokoupil, Sodexo District Manager for Western Colorado, Wyoming, Utah, and Nevada, as he took a break from carving a massive, delicious looking turkey.

Turkey carving will continue Tuesday and Wednesday. The Salvation Army will pick up the Thanksgiving feast on Wednesday afternoon.
