Favorite Fall Fare: Lauren's chicken tortilla soup

Lauren's Chicken Tortilla Soup

Ingredients
2 skinless, boneless chicken breasts, cut into cubes
1/2 teaspoon olive oil
1/2 teaspoon minced garlic
1 cup chopped onion
1/2 teaspoon chili powder
1/2 tsp cayenne pepper
1 tsp ground cumin
1/4 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
2 cans chicken broth
2 cans diced tomatoes
1 can corn
1 can hominy
1 can black beans

Directions
Saute chunks of chicken in olive oil until slightly browned. Add garlic and onion and stir for one minute. Add all seasonings and stir for about 3 minutes. Add the next 5 canned ingredients and let simmer for half hour. Serve with shredded cheese, avocado and chips.

Halloween Safety Tips

Before your ghosts and goblins trick or treat this year, parents should keep in mind some safety tips.
  • Carry a Flashlight ~ A glow bracelet, necklace, or flashing attire also work well for visibility.
  • Plan Route in Advance ~ Trick or treat in familiar neighborhoods or areas.
  • Only Visit Lit Houses ~ Residents who do not wish to be bothered by trick or treaters often leave off their lights.
  • Accompany Your Children ~ If they are older and trick or treat without an adult, set firm rules and have them carry a cell phone.
  • Think Practical for Costumes ~ Be sure a child's mask allows full visibility and breathing.
  • Inspect All Candy ~ Never allow children to eat candy before it is inspected and throw away anything that is opened.
