Eggplant Parmigiana, oysters on a half shell, boiled hot dogs and pickled pigs feet are all popular foods. Aaron doesn't like any of those. Give him some home-cooked Italian and anything his mom makes. He blames it on his Guatemalan roots.
Aaron says it didn't take long for him to feel right at home in Grand Junction. While the move from Denver is a stepping stone toward his goal of eventually returning, he feels very lucky to work and live here.
He says the most rewarding part of his job is meeting and talking with members of the community.
Of course, living in Colorado most of his life has given him a great love for the outdoors. You can often find him riding his motorcycle in the Colorado National Monument or just out and about.
