Food trucks have taken off here in Grand Junction and the city is looking to keep up regulations with the growing trend.

City council will be talking in the next couple weeks about new regulations that would involve several agencies like the health department, the fire department, and the city’s community development office. The idea is to hold food trucks to the same standards as regular brick-and-mortar restaurants.

“Anything that is in their cooking process, they’re making smoke or grease laden vapors like if they’re frying foods then that’s going to require an inspection or a permit. Basically the inspectors are just looking at general fire safety, stuff that we’re already looking at in normal restaurants,” says spokesperson for the Grand Junction Fire Department Ellis Thompson-Ellis.

These Food Truck fire codes are new to Grand Junction, but they’re not new to the rest of Colorado or other states.
