Easy Enchiritos


1 lb ground beef
1 packet taco seasoning mix
1 large sweet onion, chopped
2-4 tbsp olive oil
1 large jar enchilada sauce
1 can refried beans
2-3 cups Mexican style cheese, shredded
4-6 large flour tortillas
Sour cream
Chopped tomatoes


Preheat oven to 350 degrees. Brown chopped onions in olive oil. Add beef and cook until it has lost its color. Drain any grease. Add taco seasoning mix and stir until fully mixed. Spray the bottom of a 9x13" baking dish. Using one flour tortilla, smear a generous amount of bean dip down the center. Top with meat mixture and a sprinkling of cheese. Fold or roll the tortilla, overlapping the ends and place folded side down in the baking dish. Continue in this manner until all of the meat mixture is used. Pour enchilada sauce over the tortillas, covering well. Sprinkle remaining cheese over the top and place in the oven. Bake for 30 minutes or until the enchiritos are heated through. Serve topped with sour cream and chopped tomatoes.

Angel notes: Depending on your appetite, you can use smaller flour tortillas if you want to make the serving sizes smaller. Also, I use Old El Paso mild taco seasoning mix and Pace mild enchilada sauce, but then I’m a wimp. You can kick it up a notch to suit your personal taste by using hotter versions of your favorite brands. You can also add chopped green chilies or other items to the meat mixture if desired. Any type of cheese can be used in this recipe. I like Kraft Mexican 4-cheese blend. Toppings may also include shredded lettuce, sliced olives, sliced jalapeZos or any of your other favorite items!
