Banana Foster


1 Banana
1 tbls Clarified butter
2 fl. oz Banana liquor
3 fl. oz Bicardi 151
1 tsp Cinnamon
2 tbls Brown sugar
Ice cream


1.) Heat small saute pan until hot and place in clarified butter
2.) Peel and cut banana to desired length and size
3.) Cook banana for 15 seconds
4.) Season with cinnamon and brown sugar
5.) Deglaze pan with banana liquor
6.) Break up any chunks of brown sugar and reduce liquid
7.) Pour in the Bicardiaway from heat to avoid immediate flare up
8.) Ignite the evaporating alcohol
9.) Allow banana to flambe and reduce liquid until it coats the back of the spoon
10.) Place a scoop of ice cream in a glass or whatever you are serving it in
11.) Place banana on top and pour over reduced liquid
